Ingredients
- 3 medium russet potatoes
- 1–2 tablespoons olive oil
- 2 tablespoons butter (softened)
- 2 cups shredded cheddar cheese (divided)
- 1 cup sour cream
- 2 slices bacon (cooked and crumbled)
- Kosher salt

Instructions
- Preheat the air fryer to 400ºF (204ºC).
- Wash the potatoes, brush with olive oil, sprinkle with salt and poke holes in them.
- Air fry for 30 minutes until tender, flipping halfway.
- Cool briefly, cut in half lengthwise, and scoop out the flesh.
- Mash the potato flesh with butter, seasonings, cheese, and sour cream until smooth.
- Stuff the potato skins with the mixture and top with remaining cheese and bacon.
- Air fry for an additional 5-7 minutes until cheese is melted.
