  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder (or chili powder)
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce (divided)

Instructions

  1. Preheat your oven to 400°F.
  2. Peel and chop sweet potatoes into 1/2" chunks and onion into 1-inch pieces. Toss with olive oil, salt, garlic powder, and chipotle powder on a lined baking sheet.
  3. Roast for about 20 minutes until tender.
  4. Add chopped broccoli (tossed with olive oil and salt) and seasoned chicken breasts brushed with BBQ sauce to the pan. Bake for another 15-20 minutes until cooked through.
  5. Shred the chicken on the baking sheet, mix with remaining BBQ sauce, divide among bowls, and serve.
