Ingredients
- 200g unsalted butter (softened)
- 200g light brown sugar
- 4 large eggs
- 100g smooth Biscoff spread
- 200g self-raising flour
- For buttercream: 125g unsalted butter, 250g icing sugar, 165g smooth Biscoff spread, and milk
Instructions
- Preheat the oven to 160C Fan/180C/350F and prepare a greased and lined 2lb loaf tin.
- Beat together the softened butter, Biscoff spread, and light brown sugar until fluffy.
- Add the eggs one at a time, mixing until smooth.
- Fold in the self-raising flour gently until just combined.
- Pour the batter into the prepared tin and bake for about 1 hour and 15 minutes or until a skewer comes out clean.
- Let cool before preparing the buttercream by mixing together unsalted butter, icing sugar, Biscoff spread, and milk until smooth.
- Frost the cooled cake with the buttercream and decorate with Lotus biscuits.
