  • 200g unsalted butter (softened)
  • 200g light brown sugar
  • 4 large eggs
  • 100g smooth Biscoff spread
  • 200g self-raising flour
  • For buttercream: 125g unsalted butter, 250g icing sugar, 165g smooth Biscoff spread, and milk

Instructions

  1. Preheat the oven to 160C Fan/180C/350F and prepare a greased and lined 2lb loaf tin.
  2. Beat together the softened butter, Biscoff spread, and light brown sugar until fluffy.
  3. Add the eggs one at a time, mixing until smooth.
  4. Fold in the self-raising flour gently until just combined.
  5. Pour the batter into the prepared tin and bake for about 1 hour and 15 minutes or until a skewer comes out clean.
  6. Let cool before preparing the buttercream by mixing together unsalted butter, icing sugar, Biscoff spread, and milk until smooth.
  7. Frost the cooled cake with the buttercream and decorate with Lotus biscuits.
