  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 8 ounces cream cheese (softened)
  • 2 large eggs
  • 3 cups blueberries (fresh or frozen)
  • Zest and juice of 2 lemons
  • Salt

Instructions

  1. Preheat the oven to 350ºF (177ºC). Line an 8" x 8" baking pan with foil.
  2. In a mixing bowl, combine melted butter, granulated sugar, lemon zest, salt, and flour to create the crust. Press into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese until smooth. Add sugar, eggs, lemon zest, lemon juice, salt, and flour; mix until combined.
  4. Gently fold in blueberries and pour the filling over the crust.
  5. Bake for 30-35 minutes until set but slightly jiggly in the center. Cool completely before cutting into bars.
