- 1/2 pound ground breakfast sausage
- 6 large eggs (beaten)
- 8 slices Colby-Jack cheese
- 4 tablespoons soft butter (divided)
- 8 slices sourdough bread
Instructions
- In a non-stick skillet, cook the ground sausage until browned. Transfer to a bowl and set aside.
- In the same skillet, melt 2 tablespoons of butter and scramble the beaten eggs until fluffy. Remove from heat.
- Combine the cooked sausage with the scrambled eggs in the bowl.
- Butter one side of each slice of sourdough bread, placing one slice butter-side down in the skillet.
- Layer with one slice of cheese, followed by about 1/2 cup of the sausage-egg mixture, another slice of cheese, and top with another slice of bread (buttered side up).
- Cook until golden brown on both sides, flipping carefully with a spatula.
