Ingredients

  • 1/2 pound ground breakfast sausage
  • 6 large eggs (beaten)
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter (divided)
  • 8 slices sourdough bread

Instructions

  1. In a non-stick skillet, cook the ground sausage until browned. Transfer to a bowl and set aside.
  2. In the same skillet, melt 2 tablespoons of butter and scramble the beaten eggs until fluffy. Remove from heat.
  3. Combine the cooked sausage with the scrambled eggs in the bowl.
  4. Butter one side of each slice of sourdough bread, placing one slice butter-side down in the skillet.
  5. Layer with one slice of cheese, followed by about 1/2 cup of the sausage-egg mixture, another slice of cheese, and top with another slice of bread (buttered side up).
  6. Cook until golden brown on both sides, flipping carefully with a spatula.
  7. Cut in half if desired and serve immediately.
