  • 3 chicken breasts, cut into strips
  • 13 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • ½ tbsp butter
  • 1 large onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp chopped sun-dried tomatoes
  • 1 tbsp tomato paste
  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1 cup shredded spinach
  • ¼ cup heavy cream
  • 3 tbsp grated Parmesan cheese

Instructions

  1. Season chicken strips with Cajun seasoning and salt. In a chef’s pan, heat olive oil and butter over medium heat, then cook the chicken until golden brown (5-7 minutes).
  2. Add onion, garlic, sun-dried tomatoes, and tomato paste; sauté for about 5 minutes until onions are translucent.
  3. Stir in the orzo and pour in chicken broth; bring to a simmer. Cover and cook for about 20 minutes while stirring frequently.
  4. Add shredded spinach to the pan when orzo is almost tender, allowing it to wilt.
  5. Mix in heavy cream and Parmesan cheese until creamy; taste and adjust seasoning before serving.
