These bowls feature roasted cauliflower, crispy chickpeas, and a creamy Green Tahini Sauce, making them not only healthy but also incredibly satisfying. Ingredients

  • 1 large head of cauliflower
  • 1 (15 oz) can of chickpeas
  • 3 Tbsp extra-virgin olive oil
  • 1 Tbsp curry powder
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 cups cooked white basmati rice (or grain of choice)
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh parsley leaves
  • 1/4 cup tahini (sesame seed paste)
  • 2 Tbsp fresh lemon juice
  • 1/2 tsp minced fresh garlic
  • 1/4 tsp ground cumin
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, combine spices: curry powder, paprika, cumin, salt, and pepper.
  3. Toss chopped cauliflower with 2 Tbsp olive oil and half the spice mixture. Drizzle chickpeas with remaining oil and spice.
  4. Spread both on separate baking sheets and roast for 30 minutes—remove chickpeas when crispy.
  5. Blend Green Tahini Sauce ingredients until smooth; add warm water to adjust consistency.
  6. Assemble bowls with rice as the base topped with roasted cauliflower, chickpeas, optional fresh veggies, and drizzle sauce.
