  • 1 pound ribeye steak, thinly sliced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1 cup provolone cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper to taste

Instructions

  1. Cook tortellini in a large pot of salted boiling water according to package instructions (3-5 minutes). Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Sauté the ribeye steak for 3-4 minutes until browned. Remove from the skillet.
  3. In the same skillet, add onion and bell pepper; cook for about 5-6 minutes until softened. Stir in garlic and cook for an additional minute.
  4. Season vegetables with salt and pepper; pour in beef broth and let simmer for 2-3 minutes.
  5. Reduce heat to low; stir in heavy cream until thickened (2-3 minutes), then add provolone cheese until melted.
  6. Return the steak to the skillet, add tortellini, and toss gently to combine. Cook another 2-3 minutes until heated through.
