  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese

Instructions

  1. In a large skillet over medium-high heat, add olive oil, ground beef, and onion. Cook until the beef is browned and onions are translucent (8-10 minutes). Drain excess grease.
  2. Stir in garlic and taco seasoning; cook for about 30 seconds until fragrant.
  3. Add beef broth, Rotel, and tomato paste; bring to a boil. Stir in rice.
  4. Cover with a lid, reduce heat to low, and cook for 15 minutes.
  5. Sprinkle shredded cheese on top and cook for another 5 minutes until melted.
  6. Serve with preferred toppings such as sour cream or guacamole.
