  • 23 tbsp chopped jalapeno pepper (seeds removed)
  • 2 tbsp chopped red bell pepper (optional but delicious)
  • 1/2 tsp dried or fresh cilantro (to taste)
  • 1/8 tsp paprika
  • 1/8 tsp salt (to taste)
  • 1/2 cup plain Greek yogurt
  • 1/2 cup all-natural mayo
  • 12 chipotle pepper in adobo
  • 1 tsp Sriracha chili sauce
  • 1 tsp parsley
  • 1 tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1/4 tsp salt

Instructions

  1. Make the smoky chipotle aioli by blending all sauce ingredients until smooth.
  2. Clean, peel, and cube the sweet potatoes into bite-sized pieces.
  3. Boil the cubed sweet potatoes in salted water for 6–10 minutes until fork-tender.
  4. Drain the sweet potatoes and gently toss them with the prepared aioli.
  5. Fold in jalapeno and red bell pepper if desired. Garnish with cilantro and paprika before serving.
