  • 3/4 cup Dutch-processed cocoa powder
  • 1 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/4 cup vegetable oil
  • 3/4 cup buttermilk
  • 3/4 cup hot water
  • 2 large eggs
  • 3 large egg whites (for frosting)
  • 1 cup dark brown sugar (for frosting)
  • 1 1/2 cups unsalted butter (for frosting)
  • 1/4 cup Dulce de Leche (for frosting)
  • 2 oz dark chocolate (for ganache)
  • 2 oz heavy whipping cream (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, sift together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, whisk together vegetable oil, buttermilk, hot water, eggs, and vanilla extract.
  4. Gradually mix the wet ingredients into the dry ingredients using an electric mixer until smooth.
  5. Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to racks.
  6. For frosting, beat egg whites until soft peaks form; gradually add brown sugar until stiff peaks form. Mix in cubed butter and then dulce de leche.
  7. Once cakes are cool, frost the top of one layer before adding the second layer; frost the entire cake.
  8. Prepare ganache by melting dark chocolate with heavy cream over low heat; pour over the frosted cake.
