  • 1/2 cup unsweetened dutch-process cocoa powder
  • 2 tablespoons flour
  • 1/2 cup low-fat milk
  • 1/2 cup water
  • 4 egg whites
  • Pinch cream of tartar
  • 3 tablespoons plus 1 teaspoon granulated sugar
  • 2 egg yolks
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spray ramekins with cooking spray and dust with granulated sugar if desired.
  3. In a bowl, whisk together powdered sugar, cocoa powder, and flour.
  4. Mix low-fat milk and water in another bowl and gently heat until warm.
  5. Beat egg yolks with vanilla extract, then gradually mix in the warm milk mixture.
  6. Fold the dry ingredients into the egg yolk mixture until combined.
  7. In a clean bowl, beat egg whites with cream of tartar until soft peaks form; gradually add granulated sugar until stiff peaks form.
  8. Carefully fold one-third of whipped egg whites into the chocolate mixture, then fold in the remaining whites until no streaks remain.
  9. Pour batter into prepared ramekins and bake for about 20 minutes or until puffed and slightly wobbly in the center.
  10. Dust with powdered sugar before serving immediately.
