  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup almond or oat milk
  • 1 1/2 cups all-purpose flour (regular or gluten-free)
  • 1 tsp cinnamon
  • For the cinnamon swirl: 4 tbsp melted vegan butter, 1/3 cup brown sugar
  • For the glaze: 3/4 cup powdered sugar, 2 oz vegan cream cheese

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In one bowl, mix mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla until smooth.
  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, salt, and oats.
  4. Gradually add dry ingredients to wet ingredients; mix until just combined.
  5. For the cinnamon swirl, mix melted butter with brown sugar and cinnamon.
  6. Layer half the batter in the loaf pan followed by half the swirl mixture; repeat layers.
  7. Bake for about 45 minutes or until a toothpick comes out clean. Cool before glazing.
