  • 6 bacon strips
  • 1 pound boneless skinless chicken breasts
  • 10 oz penne pasta
  • 1.5 cups heavy cream
  • 3 garlic cloves (minced)
  • 2 cups spinach
  • 1 cup Parmesan cheese (shredded)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 4 small tomatoes (diced)
  • 1 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 teaspoon salt
  • 2 tablespoons parsley (chopped)

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy. Remove from skillet, crumble, and set aside.
  2. In the same skillet, add olive oil and cook seasoned chicken until golden brown on both sides (about 6-8 minutes per side). Let rest before slicing.
  3. In the same skillet, melt butter and sauté garlic, tomatoes, spinach, paprika, Italian seasoning, crushed red pepper flakes, and salt until spinach wilts.
  4. Pour in heavy cream; simmer gently. Stir in crumbled bacon and Parmesan until melted.
  5. Cook penne according to package instructions; drain and toss into the sauce mixture.
  6. Serve garnished with parsley and additional Parmesan.
