  • 1 tablespoon cumin seeds
  • 1 tablespoon coriander seeds
  • 28-ounce can crushed tomatoes
  • 1 cup dried brown lentils
  • 15-ounce can coconut milk
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a large skillet over medium-high heat. Toast cumin and coriander seeds until browned, about 45 seconds. Add chopped garlic and sauté for 2 minutes.
  2. Stir in crushed tomatoes, ginger, turmeric, and sea salt. Cook for about 5 minutes.
  3. Add lentils and cayenne (if using), then pour in water and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 35–40 minutes until lentils are tender. Stir occasionally and add extra water if needed.
  5. Once thickened, stir in coconut milk and cherry tomatoes. Simmer gently before removing from heat. Mix in chopped cilantro just before serving.
