  • 4 small to medium chicken breasts (or 2 large halved)
  • 2 tablespoons olive oil
  • 34 cloves garlic, minced
  • 1 cup light or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste
  • Optional: 1 cup chopped spinach

Instructions

  1. Season the chicken breasts with salt and pepper. In a skillet, heat olive oil over medium-high heat. Cook chicken for 5-6 minutes on each side until golden brown and crispy. Remove from skillet and set aside.
  2. Lower the heat and add minced garlic to the skillet; sauté for about 30 seconds until fragrant. Stir in the cream, followed by Italian seasoning and parmesan cheese, mixing until smooth. If desired, add chopped spinach and simmer for another 2-3 minutes.
  3. Return the chicken to the skillet, spooning sauce over it. Simmer for an additional minute before serving hot.
