  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 1 can (14 ounces) chicken broth
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 12 ounces penne pasta
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the slow cooker and sprinkle with Cajun seasoning.
  2. Add chicken broth, garlic, onion, red bell pepper, and green bell pepper.
  3. Cover and cook on low for 6 hours or high for 3-4 hours until chicken is tender.
  4. Shred the cooked chicken using two forks.
  5. Return shredded chicken to the slow cooker; stir in heavy cream, Parmesan cheese, and uncooked penne pasta.
  6. Cover again and cook on high for an additional 30 minutes until pasta is tender.
  7. Season with salt and pepper before serving.
