  • 2 pounds chicken breasts
  • ½ cup honey
  • ¾ cup soy sauce
  • 2 tablespoons rice vinegar
  • ¼ cup mirin
  • ½ teaspoon powdered ginger
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1 tablespoon cool water

Instructions

  1. Grease a large slow cooker.
  2. In the slow cooker, combine honey, soy sauce, rice vinegar, mirin, powdered ginger, garlic powder, onion powder, and sesame oil; whisk until well mixed.
  3. Add chicken breasts and turn to coat with the sauce.
  4. Cook on low for 6 hours or high for 3 hours until easily shredable.
  5. Remove chicken; shred using two forks and keep warm.
  6. Strain the sauce through a fine mesh strainer into a saucepan.
  7. Mix cornstarch with water; add to strained sauce and bring to a boil while stirring until thickened.
  8. Combine half of the thickened sauce with the shredded chicken and serve with remaining sauce.
