  • 2 servings dry instant ramen noodle cakes (approximately 140 g)
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 1.5 tsp dark soy sauce (optional)
  • 23 tbsp corn starch
  • 23 tbsp sugar (or liquid sweetener)
  • 2 tbsp rice vinegar
  • ¼ tsp ground pepper
  • ½ tbsp chili garlic sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic (minced, optional)
  • Toppings: sliced extra firm tofu, vegetables, chopped scallions, sesame seeds

Instructions

  1. Prepare the sauce by mixing all ingredients in a bowl until well combined.
  2. Boil water in a pot and cook the ramen noodles for about 2-3 minutes less than package instructions. Drain and set aside.
  3. In a non-stick frying pan over medium-high heat, sauté your chosen vegetables or protein until cooked through.
  4. Pour the prepared sauce into the pan with the sautéed ingredients and simmer for 2-3 minutes until it thickens slightly.
  5. Add the drained noodles to the pan and mix well to coat with sauce.
  6. Cook together for about 3 minutes until noodles absorb some sauce; adjust seasoning if needed.
  7. Serve hot, garnished with sesame seeds and chopped scallions.
