Ingredients
- 24 oz salmon fillets
- 1 cup 2% milk
- 1 tbsp cornstarch
- 2 tbsp butter
- 2 cloves garlic
- 2 cups fresh spinach (chopped)
- 1 cup cherry tomatoes (halved)
- 1/4 cup sun-dried tomatoes
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Pasta of choice (Barilla Protein+ recommended)
Instructions
- Preheat a nonstick pan over medium heat.
- Cut the salmon into four portions and season with salt and pepper.
- Add olive oil to the pan, then place the salmon skin-side down. Cook for 4-5 minutes on each side until cooked through.
- In a bowl, mix milk and cornstarch until smooth. In the same pan, melt butter, then sauté minced garlic until fragrant.
- Stir in spinach, cherry tomatoes, and sun-dried tomatoes until spinach wilts.
- Pour in the milk mixture and stir until thickened; combine with cooked pasta and gently fold in salmon pieces.
