Instructions

  1. In a large mixing bowl, combine the flour, baking powder, and salt.
  2. Add the olive oil and warm water; mix with your hands until the dough begins to form.
  3. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  4. Divide the dough into 8 equal pieces for larger tortillas or 10 for medium sizes; roll into balls.
  5. Let the dough balls rest for at least 30 minutes under a clean kitchen towel.
  6. Roll each ball into an 8-10 inch circle for large tortillas or a 6-8 inch circle for medium ones.
  7. Heat a skillet over medium-high heat and cook each tortilla for about 30-45 seconds per side until brown spots appear.
  8. Keep cooked tortillas warm in a tortilla warmer or sealed bag.
