  • 12 whole graham crackers
  • 2 tablespoons granulated sugar
  • 8 tablespoons (1 stick) melted butter
  • 1 box (3.4 oz) instant lemon pudding
  • 1½ cups half and half
  • 8 ounces softened cream cheese
  • ½ cup powdered sugar
  • 16 ounces Cool Whip (thawed)
  • 1 can (21 oz) blueberry pie filling

Instructions

  1. In a food processor, blend graham crackers with sugar until fine crumbs form. Slowly add melted butter and mix until evenly coated.
  2. Press the crumb mixture firmly into the bottom of a 9×13 baking pan and freeze for about 20 minutes.
  3. Whisk instant lemon pudding with half and half in a medium bowl until thickened; let sit for 5 minutes.
  4. In a larger bowl, beat softened cream cheese with powdered sugar until smooth. Add the thickened lemon pudding mixture and blend well.
  5. Gently fold in one tub of Cool Whip until combined.
  6. Spread the lemon cheesecake mixture over the chilled crust, top with blueberry pie filling, then layer with the remaining Cool Whip.
  7. Cover and refrigerate for at least 8 hours before serving.
