  • 4 pounds russet potatoes
  • 12 ounces bacon (cooked and chopped)
  • 1 cup mayonnaise
  • 3/4 cup sour cream
  • 1 1/2 cups shredded medium cheddar cheese
  • 6 green onions (chopped)
  • 12 tablespoons olive oil
  • 3 tablespoons apple cider vinegar
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Pierce cleaned potatoes with a fork, coat with olive oil and salt, then roast on a baking sheet for 50-60 minutes until tender. Let cool slightly before peeling and cubing.
  3. While cooling, cook bacon until crispy; crumble into pieces.
  4. In a bowl, mix mayonnaise and sour cream; season with salt and pepper.
  5. Combine warm potatoes with dressing, bacon, green onions, and cheese in a large mixing bowl; fold gently.
  6. Chill in the refrigerator for at least 3 hours before serving.
