  • 1 cup dried red kidney beans (soaked overnight)
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 5 cups vegetable stock
  • 2 tablespoons Cajun seasoning
  • 1 cup long white grain rice

Instructions

  1. Heat oil in a large pot over medium heat and brown the sliced vegan sausage.
  2. Add diced onion, celery, and bell pepper; sauté until onions are translucent.
  3. Stir in Cajun seasoning, vegetable stock, bay leaves, thyme, and chopped garlic.
  4. Drain soaked beans and add to the pot. Season with black pepper and optional apple cider vinegar.
  5. Cover and simmer for 1 to 1.5 hours until beans are soft; add water if needed.
  6. While the stew simmers, cook rice according to package instructions.
  7. Mash some beans against the pot's side to thicken the stew for an additional 5 minutes.
  8. Remove bay leaves before serving alongside rice.
