Ingredients

  • 4 salmon fillets
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 1/4 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Dried thyme
  • Dried basil
  • Salt
  • Pepper

Instructions

  1. Gather and measure all ingredients.
  2. Heat olive oil and butter in a frying pan over medium heat. Season salmon with salt and pepper.
  3. Cook salmon skin-side down for about 5–6 minutes until golden brown; flip and cook for an additional 5 minutes until fully cooked.
  4. Remove salmon and set aside. In the same pan, sauté garlic until fragrant, then add sun-dried tomatoes, heavy cream, chicken broth, Parmesan cheese, thyme, and basil. Simmer until combined.
  5. Return salmon to the pan, spoon sauce over it for 2 minutes, and garnish with fresh parsley before serving.
