  • 2/3 cup sweetened condensed milk
  • 1/4 cup unsalted butter (cut into chunks)
  • 1/4 cup light brown sugar
  • 2 Tbsp light corn syrup
  • 1 tsp vanilla extract
  • 1/2 tsp fine salt
  • 1/2 cup unsalted butter (for the shortbread)
  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/4 tsp fine salt
  • 1 1/2 cups granulated sugar
  • 3/4 cup all-purpose flour
  • 2/3 cup unsweetened cocoa powder, sifted
  • 1/2 cup powdered sugar
  • 1/2 cup dark chocolate chips
  • 1/2 tsp fine salt
  • 2 large eggs
  • 1/4 cup vegetable or canola oil
  • 1/4 cup unsalted butter, melted
  • 2 Tbsp water
  • 1 tsp vanilla extract
  • 1/2 cup heavy whipping cream (for ganache)
  • 2/3 cup dark chocolate chips (for ganache)
  • 2 Tbsp unsalted butter (for ganache)
  • 1 Tbsp light corn syrup – optional (for ganache)
  • 1/4 tsp fine salt (for ganache)
  • flakey sea salt – garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 9×13 inch baking pan.
  2. Prepare the shortbread crust by mixing together room-temperature butter, flour, powdered sugar, and salt until crumbly. Press into the pan and bake for about 15 minutes until golden.
  3. For the caramel layer, heat sweetened condensed milk, butter, brown sugar, corn syrup, vanilla extract, and salt in a saucepan until melted and smooth. Pour over the cooled shortbread.
  4. Make the brownie batter by whisking together granulated sugar, flour, cocoa powder, dark chocolate chips, salt, eggs, oil, melted butter, water, and vanilla extract until smooth. Pour over the caramel layer.
  5. Bake for 25-30 minutes or until mostly clean when tested with a toothpick.
  6. For the ganache topping, heat heavy cream until simmering then pour over dark chocolate chips in a bowl; stir until smooth. Add butter and optional corn syrup.
  7. Once brownies are cool, pour ganache on top and garnish with flaky sea salt if desired.
