  • 2 cups Heavy Cream
  • 1/2 cup Unsalted Butter
  • 6 cups Sugar (divided)
  • 1 1/2 cups Walnuts or Pecans (chopped)
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Baking Soda

Instructions

  1. Lightly grease a 9×13-inch baking dish.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat, stirring frequently until liquefied (about 20 minutes).
  3. In a large saucepan, combine the remaining sugar with the heavy cream and simmer on low heat.
  4. Once the first batch of sugar is melted, pour it into the creamy mixture while stirring continuously.
  5. Increase heat to medium until the mixture reaches 244°F (softball stage).
  6. Stir in baking soda off the heat, then add butter and vanilla extract until smooth.
  7. Let rest for about 20 minutes before stirring in nuts.
  8. Transfer to the greased baking dish and cool completely before slicing.
