  • 2 tsp almond extract
  • 1 1/3 cups ground almonds
  • 2 1/2 cups all-purpose flour (or gluten-free)
  • 3 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1 cup raspberry jam

Instructions

  1. Preheat your oven to 350°F and prepare two 8-inch cake pans with parchment paper.
  2. In a large mixing bowl, whisk together sugar, melted vegan butter, dairy-free yogurt, vanilla extract, and almond extract until combined.
  3. Gradually add ground almonds, flour, baking powder, baking soda, and sea salt to the wet mixture. Slowly incorporate the vegan buttermilk while whisking until just combined.
  4. Divide the batter evenly between prepared pans and bake for about 40–42 minutes or until a toothpick comes out clean.
  5. Cool cakes in pans for ten minutes before transferring them to a cooling rack. Once cooled completely, slice each layer in half horizontally.
  6. Prepare your vegan cream cheese frosting as per your recipe.
  7. Assemble the cake by layering frosting and raspberry jam between each layer and decorating as desired.
