Ingredients
- 4 skinless boneless chicken thighs
- 200g fresh pineapple chunks
- 1 small shallot
- Juice of 1 lime
- 2 tbsp chipotle paste
- 2 tbsp runny honey
- 1 ripe avocado
- 8 small corn or flour tortillas
Instructions
- Preheat the oven to 200°C (392°F).
- In a medium bowl, whisk together chipotle paste, honey, lime juice, crushed garlic, chopped coriander, tomato puree, and salt. Add chicken pieces and coat well with the marinade. Set aside.
- Spread marinated chicken on a baking tray and add pineapple chunks. Roast for 30 minutes until cooked through.
- While roasting, chop shallot and cube avocado.
- Warm tortillas in a hot pan if using corn tortillas.
- Once done, remove from oven, squeeze lime juice over the mixture, and toss with shallots. Serve with avocado cubes and desired toppings.
