Ingredients

  • 4 skinless boneless chicken thighs
  • 200g fresh pineapple chunks
  • 1 small shallot
  • Juice of 1 lime
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 1 ripe avocado
  • 8 small corn or flour tortillas

Instructions

  1. Preheat the oven to 200°C (392°F).
  2. In a medium bowl, whisk together chipotle paste, honey, lime juice, crushed garlic, chopped coriander, tomato puree, and salt. Add chicken pieces and coat well with the marinade. Set aside.
  3. Spread marinated chicken on a baking tray and add pineapple chunks. Roast for 30 minutes until cooked through.
  4. While roasting, chop shallot and cube avocado.
  5. Warm tortillas in a hot pan if using corn tortillas.
  6. Once done, remove from oven, squeeze lime juice over the mixture, and toss with shallots. Serve with avocado cubes and desired toppings.
