  • 1/2 cup brown sugar, packed

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup jelly (grape or strawberry)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until smooth.
  5. Scoop about 2 tablespoons of dough, flatten into discs, and place half on the baking sheet.
  6. Add about 1 teaspoon of jelly in the center of each disc.
  7. Top with another disc of dough and seal the edges by pressing down firmly.
  8. Bake for 12-15 minutes or until edges are golden brown. Allow cooling for a few minutes before transferring to a wire rack.
