  • 1 lb hot Italian sausage
  • 1 small yellow onion
  • 1 red bell pepper
  • 1 green bell pepper
  • 46 garlic cloves
  • 28 oz can crushed tomatoes
  • 14.5 oz can fire-roasted diced tomatoes
  • 3/4 cup uncooked long-grain white rice
  • 6 cups low-sodium beef broth
  • Fresh herbs (basil, oregano, parsley)
  • Parmesan cheese

Instructions

  1. In a large soup pot over medium-high heat, brown the sausage and onion for about 4 minutes. Add bell peppers, garlic, and red pepper flakes; sauté until tender.
  2. Stir in crushed tomatoes, diced tomatoes, rice, herbs, and broth. Mix well.
  3. Bring to a boil then reduce heat to low. Cover and simmer for about 8–12 minutes or until rice is cooked.
  4. Stir in Parmesan cheese and adjust seasoning as needed. Serve topped with shredded mozzarella.
