  • 1 cup vegetable oil

  • 3/4 cup brown sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 1 can (15 oz) pure pumpkin puree
  • 1 tablespoon butter (softened)
  • 3 oz cream cheese (softened)
  • 1 cup powdered sugar (or more as needed)
  • 12 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a bundt pan.
  3. In a mixing bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder, and salt.
  4. In another bowl, mix vegetable oil, white sugar, brown sugar, and vanilla extract until smooth. Beat in eggs one at a time.
  5. Stir in the pumpkin puree until well combined.
  6. Gradually add the dry mixture to the wet mixture; mix until just combined.
  7. Pour the batter into the prepared bundt pan and smooth the top.
  8. Bake for about 60 minutes or until a toothpick comes out clean.
  9. Allow to cool in the pan for about 10 minutes before transferring to a cooling rack.
  10. For glaze: Beat softened cream cheese with powdered sugar and milk until smooth; drizzle over cooled cake.
