Ingredients
- 1 cup basmati rice
- 2 medium red onions
- 1 small potato
- 1/2 cup cauliflower florets
- 1 medium carrot
- Green beans
- Spices: cardamom, cloves, cumin seeds, cinnamon stick, bay leaf
- Fresh herbs: cilantro and mint
- Yogurt and ghee
Instructions
- Soak basmati rice in water for 30 minutes.
- In a heavy-bottomed pot, heat oil and ghee. Sauté spices until fragrant.
- Add half of the sliced onions; cook until golden brown. Set aside for garnishing.
- Stir in remaining onions, ginger, garlic, green chilies, potato, carrot, cauliflower, and green beans. Sauté until tender.
- Mix in soaked rice along with yogurt, saffron milk, biryani masala, salt, water, cilantro, mint leaves, and rose water.
- Cover tightly and cook on low heat for 30-35 minutes.
- Garnish with fried onions and serve hot.
