  • 1 pound lean ground beef
  • 1/4 cup panko bread crumbs
  • 2 tablespoons tomato paste
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon ground mustard
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon fresh ground pepper
  • pinch of salt
  • 1 large vidalia onion (diced)
  • 4 ounces sliced white mushrooms
  • 1 teaspoon fresh chopped thyme leaves
  • 1/2 teaspoon garlic powder
  • 2 1/2 tablespoons flour or cornstarch
  • 3 cups beef stock
  • 1 teaspoon worcestershire sauce
  • 1 tablespoon butter
  • kosher salt and pepper (to taste)
  • Chopped fresh parsley or chives

Instructions

  1. In a mixing bowl, combine ground beef, panko, tomato paste, Worcestershire sauce, mustard, onion powder, pepper, and salt. Form into four oval patties.
  2. Heat olive oil in a cast iron skillet over medium heat. Brown the patties on both sides; transfer to a plate and keep warm.
  3. Sauté onions in the same skillet until translucent. Add mushrooms and cook until softened.
  4. Stir in thyme and garlic powder; sprinkle flour and mix well.
  5. Gradually add beef stock while scraping the pan to deglaze. Bring to a boil and stir in Worcestershire sauce and butter; season to taste.
  6. Return patties to the gravy and simmer until cooked through.
