  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter (melted)
  • ½ cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup bittersweet chocolate chips
  • 2 cups mini marshmallows

Instructions

  1. Preheat oven to 350°F. Prepare an 8×8-inch baking pan with nonstick spray and line with parchment paper.
  2. In a food processor, blend graham crackers and sugar until fine crumbs form. Mix in melted butter until fully coated.
  3. Press the graham cracker mixture into the bottom of the prepared pan and bake for 15–20 minutes until golden.
  4. In a bowl, combine vegetable oil, sugar, eggs, and vanilla; whisk until combined. Add cocoa powder, flour, salt, and baking powder—mix until smooth; fold in chocolate chips.
  5. Pour brownie batter over the cooled crust and spread evenly. Bake for 30–40 minutes until set.
  6. Broil mini marshmallows on top for about 2 minutes until toasted.
  7. Allow to cool for at least 30 minutes before slicing.
