  • 1 ½ teaspoons instant yeast
  • 2 teaspoons granulated sugar
  • 2 cups + 1 tablespoon all-purpose flour
  • 200 grams (about ¾ cup) sourdough discard (unfed, at room temperature)
  • 1 egg (lightly beaten)
  • 1 tablespoon fresh parsley or rosemary (chopped)
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 9 tablespoons unsalted butter (melted and softened)
  • Flaky sea salt (for topping)

Instructions

  1. In a stand mixer bowl, combine warmed milk, instant yeast, and sugar. Add flour, sourdough discard, beaten egg, herbs, salt, and garlic powder. Mix on low speed while adding melted butter until a shaggy dough forms.
  2. Knead the dough on a floured surface for about 3–4 minutes until smooth.
  3. Place in a greased bowl, cover with plastic wrap, and let rise for 60–90 minutes until doubled in size.
  4. Prepare the topping by mixing softened butter with herbs, garlic powder, and salt.
  5. Divide the dough into 12 equal pieces; flatten each piece and spread with the butter mixture before folding.
  6. Place folded pieces in a greased loaf pan and let rise for another 30–45 minutes until puffed.
  7. Preheat oven to 350℉ and bake for 30 minutes; cover with foil for an additional 5–10 minutes until golden brown.
  8. Brush with remaining butter mixture while warm; sprinkle with flaky sea salt before cooling.
