  • 8 oz spaghetti (or preferred pasta)
  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 4 cups fresh spinach
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt & black pepper to taste
  • 1/2 cup chicken or vegetable broth

Instructions

  1. Cook spaghetti in a large pot of salted boiling water until al dente; drain.
  2. In a skillet over medium heat, heat olive oil and sauté garlic until fragrant.
  3. Add shrimp; cook until pink (3-4 minutes). Stir in cherry tomatoes and cook for another 2-3 minutes.
  4. Add spinach; stir until wilted. Season with red pepper flakes, salt, and pepper.
  5. Pour in broth; simmer briefly before tossing in the cooked pasta. Mix well and serve warm.
