- 2 cups cherry tomatoes, halved
- 4 cups fresh spinach
- 1/2 teaspoon red pepper flakes (optional)
- Salt & black pepper to taste
- 1/2 cup chicken or vegetable broth
Instructions
- Cook spaghetti in a large pot of salted boiling water until al dente; drain.
- In a skillet over medium heat, heat olive oil and sauté garlic until fragrant.
- Add shrimp; cook until pink (3-4 minutes). Stir in cherry tomatoes and cook for another 2-3 minutes.
- Add spinach; stir until wilted. Season with red pepper flakes, salt, and pepper.
- Pour in broth; simmer briefly before tossing in the cooked pasta. Mix well and serve warm.
