  • 1 cup salted butter (room temperature)
  • 1 cup powdered sugar
  • 2 cups all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 6 tablespoons salted butter (for caramel)
  • ½ cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup heavy whipping cream (divided)
  • 1 ¼ cups milk or dark chocolate

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, beat together room temperature butter, powdered sugar, and vanilla until creamy. Gradually add flour until combined.
  2. Press the mixture into a greased 9×13 inch baking pan and bake for 20 minutes until lightly golden.
  3. For the caramel, melt butter in a saucepan over medium heat, then stir in corn syrup, granulated sugar, and salt. Add half of the heavy cream and cook until bubbly (5–7 minutes). Stir in vanilla and pour over baked shortbread.
  4. For the chocolate topping, melt chocolate chips with remaining heavy cream in another saucepan over low heat until smooth. Pour over the caramel layer.
  5. Allow to cool at room temperature for 30 minutes, then refrigerate for at least four hours before cutting into squares.
