  • 2 cups pineapple chunks (fresh or frozen)
  • 1 red bell pepper (diced)
  • 3/4 cup green peas (frozen & thawed)
  • 1 cup purple cabbage (shredded)
  • 1/2 red onion (diced)
  • 3 cloves garlic (minced)
  • 4 tbsp tamari
  • 1.5 tbsp maple syrup
  • Optional: hot sauce or red chili flakes

Instructions

  1. In a small bowl, whisk together tamari, maple syrup, garlic powder, hot sauce, and ginger to create the stir-fry sauce.
  2. Heat a cast iron skillet over high heat and sauté pineapple chunks until caramelized; set aside.
  3. Stir-fry bell pepper and onion until slightly colored; remove from skillet.
  4. Add shredded cabbage to skillet and wilt for about one minute before adding minced garlic.
  5. Incorporate chilled brown rice and peas into the skillet; pour in the stir-fry sauce and mix.
  6. Gently fold in reserved vegetables, garnish with fresh herbs or lime juice if desired.
