- 1 teaspoon vanilla extract
- 1/2 cup sour cream (120 ml) (room temperature)
- 3 large eggs (room temperature)

Instructions
- Preheat your oven to 350°F (180°C).
- Prepare a 9-inch springform pan by wrapping its exterior in aluminum foil and greasing it lightly with cooking spray.
- For the crust, mix graham cracker crumbs, brown sugar, cinnamon, and melted butter until combined. Press into the bottom of the springform pan.
- For the apple filling, slice apples and toss them with brown sugar and cinnamon. Set aside.
- In a mixing bowl, beat cream cheese until smooth. Gradually add granulated sugar and brown sugar, mixing well. Incorporate eggs one at a time, followed by sour cream and vanilla extract until smooth.
- Layer half of the cheesecake batter over the crust, add apples on top, then pour remaining batter. Sprinkle crumble topping over it.
- Bake in a water bath for about 60 minutes or until slightly jiggly in the center.
- Cool gradually in the oven with the door ajar before refrigerating overnight.
