Apple Crisp Cheesecake is the ultimate dessert that brings together the creamy richness of vanilla cheesecake and the warm, spiced flavor of cinnamon apples, all nestled in a thick graham cracker crust.

  • 3 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 cup unsalted butter (112 grams) (melted)
  • 2 large apples (Granny Smith or Gala)
  • 2 tablespoons brown sugar
  • 1 1/2 teaspoons cinnamon
  • 1/2 cup all-purpose flour (63 grams)
  • 1/2 cup brown sugar (100 grams)
  • 1 teaspoon cinnamon
  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (56 grams) (melted)
  • 24 ounces full-fat cream cheese (680 grams) (room temperature)
  • 3/4 cup granulated sugar (150 grams)
  • 1/4 cup brown sugar (50 grams)
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (120 ml) (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Prepare a 9-inch springform pan by wrapping its exterior in aluminum foil and greasing it lightly with cooking spray.
  3. For the crust, mix graham cracker crumbs, brown sugar, cinnamon, and melted butter until combined. Press into the bottom of the springform pan.
  4. For the apple filling, slice apples and toss them with brown sugar and cinnamon. Set aside.
  5. In a mixing bowl, beat cream cheese until smooth. Gradually add granulated sugar and brown sugar, mixing well. Incorporate eggs one at a time, followed by sour cream and vanilla extract until smooth.
  6. Layer half of the cheesecake batter over the crust, add apples on top, then pour remaining batter. Sprinkle crumble topping over it.
  7. Bake in a water bath for about 60 minutes or until slightly jiggly in the center.
  8. Cool gradually in the oven with the door ajar before refrigerating overnight.
