  • 1/2 cup butter (melted)
  • 1 cup light brown sugar (packed)
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup shredded carrots
  • 4 ounces cream cheese (room temperature)
  • 1/4 cup granulated sugar
  • 1 large egg yolk

Instructions

  1. Preheat oven to 350°F and prepare an 8×8 baking pan with non-stick spray.
  2. In a bowl, mix melted butter and brown sugar until smooth. Add the egg and vanilla; stir well.
  3. In another bowl, whisk together flour, cinnamon, baking powder, and salt. Gradually add to the wet mixture, mixing until just combined. Fold in shredded carrots.
  4. For the cream cheese swirl, beat cream cheese until smooth; mix in sugar, egg yolk, and vanilla until blended.
  5. Pour half of the carrot cake batter into the prepared pan; layer half of the cream cheese mixture on top. Repeat with remaining batters and swirl gently with a knife.
  6. Bake for about 40 minutes or until a toothpick comes out clean from the center.
