  • 1 pound salmon fillets (or your preferred fish)
  • ⅓ cup olive oil
  • 1 red bell pepper, sliced
  • 1 serrano pepper (or 2 jalapeños), sliced
  • ½ cup chopped cilantro
  • 2 carrots, cut into strips
  • 6 garlic cloves, halved
  • 1 tablespoon tomato paste
  • Sweet paprika
  • Hot paprika
  • Coarse salt
  • Cumin
  • Turmeric

Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Add red bell pepper, serrano pepper, carrots, and garlic; sauté for 2-3 minutes.
  2. Stir in tomato paste and spices (sweet paprika, coarse salt, cumin, turmeric). Cook for another 2-3 minutes until fragrant.
  3. Add half of the cilantro and about ¾ cup water to the pan. Cover and simmer for 12-15 minutes until veggies are tender.
  4. Lightly season fish fillets with salt and place them in the sauce. Spoon sauce over fillets and cover again.
  5. Cook on low for 20-25 minutes until fish is flaky. Garnish with lemon slices before serving.
