  • 1 can (14 oz) full-fat coconut milk
  • 4 cod fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1/2 teaspoon chili powder (optional for heat)
  • 2 garlic cloves, minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine coconut milk, olive oil, spices, minced garlic, lime juice, salt, and pepper; whisk until smooth.
  3. Season cod fillets with salt and pepper and place in a baking dish. Pour the coconut curry sauce over the top.
