Ingredients
- 5 pieces of bacon
- 1 lb ground beef
- 1/4 cup butter
- 1/4 cup diced onion
- 2 sticks diced celery
- 1/2 teaspoon minced garlic
- 6 tablespoons flour
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Worcestershire sauce
- 1 lb Yukon potatoes (peeled & diced)
- 2 cups shredded sharp cheddar cheese
- Salt & pepper to taste
Instructions
- In a large soup pot, cook the bacon over medium-high heat until crispy. Transfer to a paper towel-lined plate.
- In the same pot, brown the ground beef, then drain excess fat.
- Sauté onions and celery in melted butter for about 5 minutes until soft.
- Add garlic and flour; cook for 2 minutes while stirring.
- Gradually whisk in chicken broth until smooth.
- Stir in heavy cream, Worcestershire sauce, diced potatoes, and return cooked beef to the pot. Bring to a boil, then simmer for 15 minutes or until potatoes are tender.
- Mix in cheese until melted; adjust thickness with more broth if needed.
- Stir in some crispy bacon; season with salt and pepper.
