  • 2 boneless skinless chicken breasts
  • 8 cups chicken broth
  • 4 celery stalks (chopped)
  • 4 whole carrots (peeled and chopped)
  • 1/2 onion (diced)
  • 1/4 teaspoon dried thyme leaves
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 bay leaves
  • 2 cups egg noodles
  • 2 cups water

Instructions

  1. In a large stock pot or Dutch oven, combine chicken breasts, chicken broth, celery, carrots, and onions.
  2. Bring the mixture to a boil. Once boiling, reduce heat to low and cover.
  3. Cook until chicken is fully cooked (internal temperature of 165°F), about 20–30 minutes.
  4. Remove the chicken from the pot and shred using two forks; return shredded chicken to the pot.
  5. Stir in thyme leaves, minced garlic, salt, pepper, bay leaves, egg noodles, and water.
  6. Cook over medium-high heat for about 10 minutes until noodles are tender.
  7. Remove bay leaves before serving.
