Ingredients
- 16 oz rotini pasta
- 4 (10 oz) bags frozen fire-roasted corn or 3 (15 oz) cans of corn (drained)
- 1 cup crumbled Cotija cheese
- 1/3 cup chopped cilantro
- 1 cup sour cream
- 1/2 cup mayonnaise
- Juice and zest of 3 limes
- Chili powder
- Garlic powder
- Cayenne pepper
Instructions
- Cook the rotini pasta according to package directions until al dente. Drain and let cool.
- In a medium bowl, mix sour cream, mayonnaise, olive oil, lime juice and zest, chili powder, garlic powder, cayenne pepper, salt, and pepper.
- In a large bowl, combine cooled pasta with corn, Cotija cheese, and cilantro. Pour most of the dressing over and toss gently.
- Serve on a platter with any remaining dressing drizzled on top and garnish with extra cilantro.
