- 3 large chicken breasts
- 1 tbsp olive oil
- 1/4 tsp chili powder
- 1/4 tsp garlic powder
- 1/4 teaspoon cumin
- 1/4 tsp salt
- 8 oz (1 block) cream cheese
- 3 tbsp sour cream
- 1/3 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- 1/2 tsp coriander
- 1/2 tsp salt
- 3 green onions (minced)
- 2 tbsp cilantro (minced)
- 1 lime (juiced)
- 1 cup shredded cheddar cheese
- 1/2 cup shredded pepper jack cheese
- 16–18 small flour tortillas
- 1/2 cup sour cream (for serving)
- 1 tbsp cilantro (minced, for serving)
- 1/2 lime (juiced, for serving)
- 1/4 tsp garlic powder (for serving)
Instructions
- Preheat oven to 375°F (190°C) and season chicken breasts with olive oil and spices. Bake for 20-25 minutes until cooked through. Shred the chicken.
- Increase oven temperature to 425°F (218°C). In a bowl, mix cream cheese with sour cream, salsa, spices, lime juice, cheeses, shredded chicken, green onions, and cilantro.
- Fill tortillas with a few tablespoons of the mixture; roll tightly and place seam-side down on a baking sheet.
- Bake for 15-20 minutes until golden brown.
