  • 1 cup peanut butter
  • 1/3 cup powdered sugar
  • 2 cups semi-sweet chocolate chips

  2. Place rice Chex in a large bowl and crush into smaller pieces while keeping some larger chunks.
  3. Pour the peanut butter mixture over the crushed cereal and mix until well combined. Chill for about 30 minutes.
  4. Melt chocolate chips using a double boiler until smooth.
  5. Roll chilled cereal mixture into balls about 1½ tablespoons each (yields around 18 truffles).
  6. Dip each ball in melted chocolate until fully coated and place on a parchment-lined baking sheet.
  7. Once chocolate hardens, roll truffles in the remaining powdered sugar before serving.
