  • 1 cup cocoa powder

  • 2 cups mashed sweet potato (about 34 large sweet potatoes)
  • 2 large eggs
  • 1/2 cup maple syrup
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9 or 10-inch cake pan.
  2. In a food processor, combine coconut flour, cocoa powder, sugar, baking powder, and salt.
  3. Add the mashed sweet potato, eggs, maple syrup, coconut oil, and vanilla extract. Blend until smooth.
  4. Pour the batter into the prepared cake pan and bake for 45–50 minutes or until a skewer inserted comes out clean.
  5. Let the cake cool completely before frosting with chocolate frosting or serving plain.
