- 2 (5 oz) cans tuna, drained
- 1 medium onion, chopped
- ½ stalk celery, chopped
- 1 clove garlic, minced
- 1 tbsp parsley, chopped
- 3–4 tbsp mayonnaise
- 3 tbsp extra virgin olive oil (divided)
- ⅓ cup mozzarella cheese, shredded
- Sliced bread
- Softened butter
- Salt and pepper to taste
Instructions
- In a medium bowl, combine drained tuna with onion, celery, garlic, parsley, mayonnaise, olive oil, mozzarella cheese, salt, and pepper.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of olive oil.
- Butter one side of a slice of bread and place it in the skillet with the buttered side down.
- Scoop about 2 tablespoons of the tuna salad onto the browning side of the bread. Butter another slice on one side and place it on top of the filling with the non-buttered side facing down.
